Applications are invited for the above-mentioned position in the Cellar Department, based at Adam Tas in Stellenbosch. The successful incumbent will report to the Cellar Manager and will be responsible for the red wine production.
Key responsibilities include, but are not limited to:
- Oversee the production of red base wines, including pressing and seasonal winemaking activities
- Collaborate with the viticulturist to assess grape quality and plan intake accordingly.
- Manage and oversee the entire winemaking process from start to finish.
- Maintain accurate stock control of wine and production materials.
- Blend, fine, and filter wines to meet secondary production requirements.
- Oversee stock management of both wine and additives to ensure availability.
- Implement and uphold the Quality Management System and Organic standards.
- Ensure compliance with SAWIS certification requirements.
- Update and maintain relevant information in SAP.
- Manage and monitor the department's budget effectively.
- Conduct product tastings to ensure quality and consistency.
- Promote and enhance wine and brand reputation through presentations and participation in competitions.
- Supervise and lead subordinates, fostering a positive and productive work environment.
- Maintain workplace discipline and ensure adherence to company policies.
- Oversee and manage TPM (Total Productive Maintenance) audits.
- Conduct HACCP Food Safety Flow and Plan verifications with the team.
- Communicate changes in the work environment that may impact food safety to the Food Safety Team Leader and members.
- Actively participate in discussions regarding policy development and guideline implementation.
- Engage in risk evaluation sessions to identify and mitigate potential hazards.
- Attend awareness and training sessions on food safety, HACCP, and CCPs/OPRPs updates.
Job Requirements
- BSc Degree or BAgric, specialising in: Oenology and Vitticulture
- Minimum 5 years relevant work experience in the industry
- Extensive tasting experience and exposure to wide range of products
- Knowledge of Excel, SAP, Office 365
