Sierra Leone Brewery Limited is inviting applications from suitable candidates for the position of Brewing Operator Vacancy.

POSITION DESCRIPTION

Responsible mainly for dry milling, wort production and tank room operations.

KEY DESCRIPTION

Production

  • Liaises with the Shift Manager - Brewing on the production plan for the day.
  • Batches the brewing plan on the braumat program according to the stipulated mashing interval and brand.
  • Selects the silo for each grain using first- in -first -out (FIFO) or as otherwise instructed.
  • Monitors  milling operation  and transfer to the grist bin
  • Monitors mashing-in of grist to ensure specifications are met.
  • Monitors the brewing process in mash copper and mash tun ensuring that additives and enzymes are added as at when due.
  • Carries out PH and O.G analysis of the mash and ensures they are within specification
  •  Carries out saccharification test to ensure that saccharification is completed before mash filtration.
  • Monitors the mash filter operation and report any deviation to the Shift Manager - Brewing
  • Monitors wort boiling   operation and ensures additives are added as at when due
  • Carries out analysis of wort PH, O.G and Imhoff.
  • Samples to the laboratory  hot wort sample for bitterness and color analysis, this must be done with appropriate LSS code
  • Monitors   whirlpool operation
  • Confirms from cellars operator that connection to the fermenter is O.K and cold block is ready to receive wort.
  • Monitors wort cooling operation and ensures wort is aerated to specification.
  • Takes part in TPM activities in the brewhouse

 

 

Cleaning in place

  • Ensure that the strength of caustic soda in the soda tank is within specification for weekly CIP.
  • Carries out weekly cleaning of the Mash group, Mash filter, wort copper, whirlpool, sugar plant, and Wort cooler on weekly basis or as otherwise instructed by the Shift Manager - Brewing.
  • Flush the mash filter to remove adhering dirt during weekly CIP before acid neutralization.
  • Clean the body of the vessels and mash filter at the end of every shift.

Additives and Sugar preparation

  • Dissolve calcium chloride in the preparation tank to specification  for hardness correction
  • Prepares phosphoric acid in the preparation tank to specification for PH correction.
  • Receive hot water into the sugar dissolving tank for sugar dissolution. Supervise the dissolution and ensure the sugar syrup is prepared to specification

 Quality control

  • Carries out calibration of PH meter at the beginning of every shift
  • Runs control sample before any analysis at the start of every shift to ascertain the accuracy of the equipment.
  • Ensures that the satellite lab is clean at all times and equipment are in good condition.
     

QUALIFICATION & REQUIREMENTS

Candidates applying should have at least a higher certificate or diploma in one of the sciences from a recognized Institution or University.

Minimum of 0 - 3 years relevant experience in brewing in from any industry.
